Aristides' farm is located in the City of Madriz, part of the San Juan del Rio Coco region. The farm has 12 hectares (about 24 acres) and is located at an altitude of 1,245 meters (about 3,800 feet) above the sea level. Aristides is part of the 15 de Septiembre Cooperative and his coffee is processed at the Coop's mill with a wet (washed) process and sun dried.
As aristides explains it: "I inherited my farm from my father, José Ramon Miranda and when I took it, there were old coffee plants. Over time we renew it, working on soil preservation and protecting the forest. I have owned the farm for over 20 years. I think our secret for winning in this competition is in the good wet milling process, giving the coffee a good fermentation point"
This was the only lot in the Nicaragua COE competiton that was certified organic and we take pride in being the highest bidder. After three successive rounds of blind cuppings the International Jury gave it a cupping score of 84.86.
International Jury comments include: Aroma/flavor- green apple, citric notes, orange, apricot note, apple, cherry, cocoa Sweet, little drop of honey Acidity-citric, Notes- well-balanced, long aftertaste, long sweet finish.
